We made a quick trip to the mall yesterday to get some early school shopping done. Everything was on sale! Score! The girls were like, well...kids, only not in a candy store but in Aeropostale. Big sale going on right now. If you have one near you and that is your taste--hit the 70 percent off rack. We got some great deals and got away from home and work for a few hours.
Oh yeah, and did I mention that we went to the Little Debbie Thrift Store?
For those of you who have squash running out your ears, here is a great Squash Casserole recipe that we have been making for years in my family.
Steamed Squash with onions
8 oz. sour cream
2 cans cream of celery soup
grated raw carrots (maybe 1 or according to taste)
2 tbls. butter, melted
1or 2 sleeves of Ritz crackers
After you have steamed your squash and onions and drained it very well, add the sour cream, soup and grated carrot. Mix well and place in a casserole dish. Add crushed crackers to the melted butter and use as a topping for the casserole. Bake at 350 degrees until bubbling through.
This recipe makes a 9x13 casserole, if you need it smaller, just cut the recipe in half.
Bake and enjoy! Delicious. This is one of my favorite late night snacks lately!
